Atkins Diet – Day 6 of Phase 2 – Shrimp with Tomato Vodka Cream Sauce and Fresh Tomatoes and Basil served with Ricotta and a side dish of Cauliflower Fried “Rice”. Vegetarian Cauliflower Fried “Rice” 1 head of Cauliflower 3 T. Seasoned Bread Crumbs – use more if you have a large head of Cauliflower 2 – 3 T. Butter 2 cloves of garlic minced 1/2 shallot, minced 1/2 bunch of fresh spinach washed and wilted in a pan with water Dried spices: salt, pepper, ginger, paprika, onion, garlic powder 1. Cut up head of cauliflower and process in food processor until it’s the size of rice or small pasta. Microwave for 5 minutes. 2. Sauté garlic and shallots with 1 T. butter 3. Wilt Spinach in separate pan or wok with some water, then dry and chop 4. Add chopped spinach to pan with garlic and shallots. 5. Add Cauliflower and some remaining butter, continue to sauté 6. Add spices and seasoned bread crumbs to taste, stir and serve.
